One would think that vegetable oils used in foods, seasoning and cooking are unlikely to be healthy. It is common to hear that these fats are sources of unnecessary calories, thus promoting overweight and cardiovascular disease. The oils are in fact a paradox. Containing 100% fat and having a peak energy density of 9 kcal/g, we can ask on that basis and at a time when obesity is an epidemic pace if we should not do without. And yet the answer is clearly negative. Indeed, the PNNS, which reflects the opinion of the entire scientific community, says clearly that we must “focus on vegetable fats, promote diversity and limit animal fats”.  All these recommendations are aimed at limiting consumption of saturated fatty acids, the main component of animal fats is in favor of fatty acids that are unsaturated “fats with vegetable oils, therefore, are the main vectors.
